Bean soup conundrum
I have Paula Dean's Navy Bean Soup recipe. It says to rinse the beans in hot water until they are white. How can one rinse white beans until they are white?
I would just ignore that. Just rinse & make sure there's no stones or foreign objects. I find a lot of odd & incorrect instructions in recipes I print from the food websites.
I read somewhere that as a child, Paula Dean's family was dirt poor and could only afford dirty, non-washed navy beans. Her mother would rinse them under running water until the dirt washed off, or "until they are white".
