Please recommend a gluten free breading

I like to pay fry chicken. In the past, I used the standard flour coating, egg wash, and bread crumbs.

Now that I'm on a gluten free diet, I need a substitute for the bread crumbs (I'm guessing the flour coating won't cause a problem. Anyone with experience with this who knows otherwise, please share your experience.)

Would crushed corn flakes work?

What ideas or suggestions to you have? What pitfalls should I look out for?

    We're gluten free and use crushed, in the food processor, pork rinds. They taste amazing, and do a good job. I have also used almond flour, coconut flour, and ground flax seed. All are tasty. Maybe like the almond the best. Good Luck.

      If you are limiting gluten, you can try something like corn flakes. Most corn flakes contain gluten (in the form of malted barley). For pan-frying, you can try Pamela's baking mix or even just cornstarch. I don't care for food dredged in rice flour. It never browns the way I want.

      If you are looking for a fine bread crumb option (not just flour-like coating), you might try EnerG Foods brand of GF bread crumbs. My husband really wanted shake and bake chicken made GF. I mixed the EnerG Foods bread crumbs with cornstarch, spices (paprika, onion powder, garlic powder, etc), salt, and a few TBSP of crisco to make a much tastier and less salty version of shake and bake chicken. It would definitely give a good deep fried chicken, but I would also try it with pan-fried chicken.

        I think the flour coating will be a problem, unless you're using rice flour or similar. Corn starch works well, too.

          In the past, we used Pamela's baking mix for breading for fried chicken. The nuts make it a little more brown than you'd expect, but the result was still pretty good.

            Corn flakes would work, but perhaps toasted almonds? That might be really good I think. You could toss them with some rice flour and crunch them into a delicious, nutty crust.
