Napa: Oxbow Cheese Merchant - Brescianella acquavite ... not a shy cheese

From my understanding it is from Lombardy, there's brandy in it and it is coated in rye bran. The Cheese Merchant only gets it in once a year. I don't know what to compare this to as I don't usually go for strong cheeses. It is $40 per pound. Here's a good photo of it

Another $$$$ cheese that I'll probably try next is Fourme au Sauternes ($56 lb) from Belgium

"In order to make Fourme au Sauternes, Monsieur Cange (who has worked for more than 20 years at mastering the art of creating new cheeses and developing the perfect affinage for each) cuts cylinders of Fourme d'Ambert horizontally in half and proceeds to both inject and wash the half wheels with Sauternes before maturing them for two months ... The resulting cheese is an incredibly smooth, yet complex blue with a beautifully balanced lingering finish "

They also had some interesting butters

Beppino Occelli Italian butter from Piedmant

Delitia buffalo milk butter

Anyone tried either of those?

I always liked Oxbow Cheese Merchant. They always seem to have cheeses I haven't seen elsewhere.

  1. It's where I found Grazalema Payoyo but they stopped carrying it because it was too expensive.
