How long can I leave egg based bread rolls out

I just made a half batch of yeasted monkey bread using a bread roll recipe that uses instant yeast and an egg. I'd like to make rolls for dinner but I'm not sure about leaving them out all day and I'm afraid of putting them in the fridge too. Ideas?

  1. I would lightly oil the dough ball, put it in a plastic grocery bag and place it in the refrigerator with the open end of the bag folded under. The cold temperature in the fridge will retard the yeast and hopefully prevent over fermentation. Pull the dough out about an hour before you want to shape the rolls to allow it to warm back to room temp and allow them to rise as normal before baking.

      Thanks! Done! I was trying to store them as rolls but I guess that doesn't make sense. I may have used a tad too much oil but I think it will be OK. Thanks and Happy Thanksgiving.

        You can store them as rolls until they get stale or moldy.
