Cheese straws

I saw a recipe recently for cheese straws that looked really simple and tasty using grated cheese and spices pressed into puff pastry, rolled/cut/twisted and baked. I can't find the recipe tonight, but was planning to try this for Thanksgiving tomorrow. It seems simple enough to wing it. The catch is that it is for people who will be working tomorrow (including myself), and I'm trying to figure out how much I can do tonight. I've never used puff pastry so don't know how it handles.

I would love to fix them tonight, but am afraid they would lose their crispness by tomorrow. I actually have an oven at work, so could go as far as rolling them out and twisting to shape tonight, and just cook at work tomorrow. Two concerns with this - it takes me about an hour to get from home to work, will the pastry twists be ok out of the frig this long. And then there is always the possibility that I may be too busy to cook anything once I get there.

  1. cook them tonight, til just underdone. cool to room temp, then freeze. pop in oven tomorrow to heat and crisp.

      Thanks. Unfortunately ran out of time and didn't get them done. Oh well, means I can experiment when I do make them. Not to mention more for me!
