Roasted Beets--Peel Skin today or tomorrow?

I just roasted the beets for a salad I'm serving tomorrow. Is it best to peel the skin today or tomorrow? Thank you!

    As I recall beets peel easier when warm.

      It's easier to peel the skin today, best while they are still kind of warm.

      You can even cut them up today for the salad.

      I usually store them in a ziplock bag in the fridge- takes up less space than a bowl.

        Test one of the beets to see how easy it is to peel? Sometimes vegetables are easier to peel when warm than when cold. I found that out with sweet potatoes which are easier to peel warm. if you peel them today, the beets will be refrigerated until tomorrow in a covered bowl anyway. Less work to do tomorrow.
