creative uses for duck fat?
I came upon a pound of really delicious rendered duck fat at my local high-end meat market. I love using it in the traditional way for frying and roasting potatoes and just spreading on bread but does anyone use it for anything else? I'd love to find new things to do with it!
apart from the standard uses, I have:
dipped cherries into duck fat
Sauteed onions and peppers, duck hash, fried eggs, refried beans, chili, sofrito, duck liver pate (I'll thaw a ramekin of it for this T'giving- it came out really good). I have a lot of duck fat -enough for duck fries - but I haven't attempted them yet.
From time to time I like to use it to sauté some onions and garlic and herbs before making a pot of white beans.
