Looking for impastata
Does someone know where I can purchase impastata?
Also, is there a local source for cinnamon oil and nutmeg oil?

So intriguing -- can you tell me, what is impastata?
I saw cinnamon oil in tiny vials from LorAnn at Cooks of Crocus Hill in St. Paul, just yesterday. There may also have been nutmeg oil among the dozen or so other products; I just cannot say for sure. However a telephone call should be clear that up -- and perhaps they can get it if they don't have it in stock.

Thanks for the lead on the oils.
As SmartCookie replied, it's a thicker ricotta. It was mentioned in a cannoli thread (http://chowhound.chow.com/topics/688487), along with the cinnamon and nutmeg oils, as ingredients in "Brooklyn Style" cannoli's, which I'd like to try to reproduce. The thread doesn't include an actual recipe, but at least the ingredients, which is a start. But finding impastata and the oils is a challenge in-and-of-itself. As a substitute for the impastata, it's possible to put whole milk ricotta in a cheesecloth lined colander and drain it, but I'm not sure how much that deviates from impastata.
