Where (butcher, farm) can I get "fresh ham" (i.e. uncured, unsmoked) in Grand Rapids or West Michigan? (Looking for about 10 lb. shank...)

DeYoungs Big Top Market on Clyde Park in Wyoming, MI has fresh ham and almost any other meat you can imagine.
