HELP! Thanksgiving Breakfast Menu Ideas!

I just got asked to come up with Thanksgiving breakfast! And my mom is going shopping TOMORROW MORNING so I must email her the ingredients by then. Oh no! What's a chowhound to do?!

Thoughts/Ideas: I don't want to do anything too heavy, b/c we'll be eating so much that day, and we tend to eat mid-afternoon. I'm thinking mostly fruit, veg and protein, nothing too starchy. But I'd still like it to be fall-y. I was thinking maybe homemade apple sauce and some sort of egg and veggie dish? Eggs with spinach? And maybe some toast for people who want it.

Anyway, ideas welcome. I'm open to anything, I'm very lost.

    echo a frittata idea... i'd do them in mini or regular muffin tins to vary the add-ins.

    also, baked apples -- just core, fill with a little brown sugar, cinnamon and oats. place in baking dish and pour apple juice concentrate or diet 7-up over em and bake.

    maybe a zucchini hash instead of potato.

    a little sliced ham or lox for those who want heartier protein.

    even a yogurt, fruit, and crunchy condiment bar (almonds, granola, etc) for people to make parfaits.

      your description of what you want almost perfectly describes an eggs benedict that i had a few days ago. was english muffin, a "hash" of crumbled sausage and spinach, poached egg, and tomato hollandaise. absolutely delicious!!

        how about crepes with a filling bar? can just crank out crepes and have a selection of fruits, eggs, meats, cheeses, etc to fill them and top them with. would be pretty easy, light, and tasty!

          Quiche with fresh fruit, or a strata.

            Ditto the strata and quiche idea. Perfect, and what doesn't get eaten makes great day after breakfast.
