Amsterdam after dark - recommendations needed!

I have one night in Amsterdam (from about 5pm until 8am the following morning) and want to make the most of my time there. I would love suggestions for any of the following that may be open in the evening:

1) a great cheese shop
2) pickled fish stall
3) chocolate/candy shop
4) kitchenwares/cooking shop
5) cafe/pastry shop open before 8am, preferably near Centraal Station
6) any other suggestions for not-to-miss places for someone who travels to eat

I'll be there on a Tuesday, in a few weeks. Thanks!

Amsterdam is not renowned for its long opening hours, but these suggestions might help:
De Bakkerswinkel bakery, which has just moved to Zeedijk 37, about 5-10 mins walk from Central Station, is a good place for home-baked bread, cakes and pastries. They only open at 8am on Tues though, if you can stretch your departure time by half an hour.

One of my favourite chocolate shops in Amsterdam is Chocolatl in the Jordaan. It's open until 6pm during the week. Cheese shop Tromp has a branch not too far from Chocolatl on Elandsgracht, which is open until 8pm. They are usually more than happy to give you samples to try before you buy. http://www.kaashuistromp.nl/winkels.html

For cooking shops, you might just catch Studio Bazar in the Centre http://www.studiobazar.com/winkels/index.html or Duikelman, a kitchenwares treasure trove, in De Pijp http://www.duikelman.nl/contact.php. They're both open until 6pm on Tues.

I am looking specifically for shops open past 5 or 6pm. I have read the boards extensively and have found nothing pertaining to this topic, which is why a posted a new thread.

Hmmm. Well, if you research some of the places already mentioned (I just quickly googled Puccini Bomboni -- a fantastic chocolate place on Singel and certainly a contender for your search), the opening hours are pretty easy to come by.

FWIW - Puccini is open til 6 pm.
