I make a vinegar-based BBQ hot sauce. Last week, used my bhut jolokias for the 1st time on the wings...very good/hot/sweet & sour. Definitely needed milk-based coolant afterwards!

I like to take any jam or jelly you like (pepper jelly is great here), then thin it with a bit of vinegar and toss in sriracha. Once the wings are nearly cooked through, start basting with the mixture until it forms a glaze. It's awesome and totally customizable.

Also, harissa with some olive oil and lemon, and maybe some grated garlic, is a good, spicy change of pace that goes great with middle eastern side dishes.
