I would say about a week to ten days. Smell it first to make sure it doesn't have any unusual odors.

Well, I meant "unusual for natto." I do wonder if the OP eats natto on a regular basis, though.

So natto does go bad? I thought it was fermented and lasted almost forever, like miso. But less salt to preserve over time? I'm definitely not a natto fan because of the slime factor, just curious.

It doesn't really "go bad" per se, but in the refrigerator it does dry out and lose flavor. Of course, we eat it fairly quickly so it is always still moist. Plus, living in Japan there is no reason to freeze it.

Actually, natto does go bad. And it's not anything like miso where salt is used as a preservative. Natto has a sell by/use by date clearly stamped on the outer package, though it will last much longer if frozen. Like cheeses, natto has gone bad when you can detect an ammoniated smell.

                Thanks both of you.

Thanks, Eto-san, for the clarification. We've just never experienced it going bad. The worst that has happened is that it has dried out. I've been eating it for over 30 years and enjoy it as one would enjoy a good ripe cheese. But some people gag at the aroma.
