Pudding from plain cooked rice is trivial - add milk (about the same amount as the water you started with) and cook until it thickens. Add sugar to taste (it does not matter when). Butter and beaten eggs can be added for richness, but aren't necessary.

If you have more, or it happens again, it works well to thicken and add body to soups.

thanks for the suggestions. I think I will make a batch of rice pudding and also a spinach, bacon and mushroom quiche using the rice to form the crust.

Bummer. I guess it depends on how mushy, but I love these rice patty things...

          2 cups cooked rice
          1 egg
1/6 cup plain yogurt, preferably greek
          1/3 teaspoon salt
          1/3 tablespoon vegetable oil
          1/3 teaspoon butter

          Preheat oven to 350.
Whisk egg & yogurt until smooth. Stir in rice & season with salt to taste.
Heat cast iron skillet or similar over high heat & add oil & butter. When butter browns, drop in four 1/2 cup scoops of rice & cook until the bottoms brown, about 6 minutes.
Place pan in oven & bake for 10 minutes. The bottoms should should have a beautiful crust & the tops should be soft. Serve immediately, crust side up.
