Bummer. I guess it depends on how mushy, but I love these rice patty things...
2 cups cooked rice
1 egg
1/6 cup plain yogurt, preferably greek
1/3 teaspoon salt
1/3 tablespoon vegetable oil
1/3 teaspoon butterPreheat oven to 350.
Whisk egg & yogurt until smooth. Stir in rice & season with salt to taste.
Heat cast iron skillet or similar over high heat & add oil & butter. When butter browns, drop in four 1/2 cup scoops of rice & cook until the bottoms brown, about 6 minutes.
Place pan in oven & bake for 10 minutes. The bottoms should should have a beautiful crust & the tops should be soft. Serve immediately, crust side up. -
