Use for leftover breadcrumbs: panko and parmesan?

I made pork milanese last night with a basic panko/parmesan blend. However, I think I have more leftover breadcrumbs than I used to coat the meat!

Any suggestions on how to use it up quickly? I think there may be a little leftover egg in the mix (I tried to pick out as much as possible). I'd like to get rid over it before the end of the weekend.

I'd also like to use them with a veggie dish if possible (I try to limit meat to once a week and the pork milanese was this week!). Any suggestions?

    not sure if this counts as veggie, but you could slice up pieces of goat's cheese, dip in egg, breadcrumbs and fry. also as a topping for baked pasta is great!

      I don't think this is a great option for re=purposing. The egg/moisture will compromise the breadcrumbs crispness and I don't know how long they were out with some egg in it. If it went right into the fridge I'd say toss in some meatballs, otherwise can't offer a whole lot of options.

        How about as topping for a casserole--both beans and pasta would work well. Sprinkle them on top, drizzle with olive oil and baked in a hot oven until crunchy and brown.
