Takoyaki

Recently while browsing a Salvation Army store, I came across a Takoyaki maker. Of course, I couldn't resist. I've now used it twice. The first time, I used regular all-purpose flower and the second time I used 00 flower. The problem is both times the centers have turned out too mushy. The machine only has one setting and I tried cooking them for varying periods of time. Any ideas to solve this issue? Thanks!
