Soujouk Sausage ?

My new favorite market had a few varieties of soujouk sausages prominently displayed on the deli counter. These are dried sausage, like a pepperoni, with a very peculiar shape.
I am going to try one, but I don't know how to choose or how to use them. Could some of our more worldly Hounds please give me some advice? Thanks in advance!
