Italian Sausages in tomato sauce? Crock pot?

To go along with the philly cheesesteak was going to make Italian sausages in tomato sauce. Wondering if I could use a crock pot for this to keep them hot for a make it yourself sandwich bar. I would need to brown the sausages first, right? What about adding shaves of mozzarella cheese at the end just before serving so it melts? Will it drop to the bottom of the crock?

  1. I would put a bowl of the mozzarella cheese on the side so diners can add it themselves. It would melt away in the slow cooker.
