I know that pecan and pumpkin pies are essentially custards. How long will they keep refrigerated, without becoming soggy, or spoiling?
I only bake about once a year, at Thanksgiving, of course, However, I'm not getting younger, and I like to do as much in advance as I can, as the time I can spend on my feet is somewhat limited
Thanks, everyone, and Happy Thanksgiving!

Depending on the ambient temp of your kitchen, the pecan and pumpkin pie will easily last 5-7 days unrefrigerated (more if your house is cooler).

My suggestion is this. Make the crust and refrigerate or freeze unbaked. Mixing up the filling for either one of those pies shouldn't take very long. And obviously baking doesn't require much effort on your part. It's true that both pies will keep for a day or two, but they're so so much better when freshly baked that if you swing it at all, I think it's worth the effort.

Both will keep for a day or two covered on the counter. Don't recommend refrigeration as it can make the crust soggy.
