leftover chicken ideas

I have a good amount of leftover baked chicken. Anyone have any ideas on what to make with it? Besides a casserole. Thanks.

    Chicken curry (simplest version: use Japanese curry blocks with the chopped chicken and some onion and other veg; slightly more complicated, cook some chopped onion and apple, brown a couple Tbsp flour and a couple Tbsp curry powder, add the chopped chicken and a couple cups of broth, cook till done & serve over rice) -- it's not a "real" Indian dish, but it's yummy & makes leftover chicken worth while.

      Leftover chicken is almost never is an issue at my house. On the rare occasion the youngun doesn't strip the bones bare, hubby snarks it for chicken sandwiches with butter...and on the even rarer occasion that there's *still* any left, I'm usually begged to make a chicken pie with it (chicken, veggies, bechamel, and a little cheese in a 2-crust pie) -- with frequent variations to chicken and leek pie with big chunks of ham, or chicken and mushroom pie.

            Apparently you can make a lot of chow with it! ...was that too cliche? ;P

            I vote curry chicken salad; in a sandwich, on a plate, scooped on a salad with a creamy dressing, on crackers for a snack, on a spoon while foraging in the fridge. I love halved red grapes or dried cranberries, pecans, celery, and green onions in my curry chicken salad, and also love to cut the mayo with some yogurt.

              +1 for curried chicken salad. i make mine with currants and toasted nuts (almonds, cashews or pistachios). one of the things i love about chicken salad is the option for practically endless variation.

                +1 again. Mayo, half an avocado (mashed or cubed, just varies when you'd add it), chopped chicken, toasted sliced almonds, Madras curry powder, chopped peeled apples, lemon, chopped parsley (or cilantro if you like soap). Nom nom nom.

                Do a chicken salad with mayo, celery, cashews, raisins, and curry powder.

                        Chicken hash! Boil up some new potatoes, dice, mix with the chicken. Saute a diced onion till soft, add in the chicken and spuds, make into a cake and let brown on one side, flip and brown the other (you want it crispy). Serve with poached or fried eggs.

                          You can add rosemary or sage and mushrooms to that hash.

                          Spanish Chicken Croquettas, tossed with pasta and a sauce, dressed with Szechuan style dressing as a appetizer or with Cucumber and sesame dressing as Dan Dan Noodles.
                          Really very versatile stuff

                            Leftover chicken challenges me because I hate picking it off the carcass.

                            Last week I did a chicken salad with mayo (could probably sub or mix with the yogurt) dried cranberries, apples and fresh rosemary. It was a hit at dinner.

                              Chicken sandwiches with butter or mayo; chicken salad with your choice of good additions; topping for a green salad; stir fried with veggies; taco filling.

                              Be sure to cook your carcass with water and aromatics to get gratis chicken broth!
