Hello,

I would like to know which brand of white (shiro) miso paste to buy for miso soup? I bought
Miko brand mild paste from Uwajimaya. The soup didn't taste good so haven't used it after that :).
Any recommendations would be highly appreciated.

Thanks!

I don't remember the brand but my grandmother always used the one in the green and white tub [with red lettering] sold in the refrigerated section at Uwajimaya. Also, what kind of stock are you using. That can also make a difference. Dried bonito flakes will give you the flavor most like what you probably are used in restaurants.

Yep, that's the one my mom used. Green and white with red lettering. Your standard all purpose miso.

I also agree with Knowwpicker about the stock. What are you using?
