Veloute Bistro in the Beaches

their exec chef had excellent reviews from Kates when he was chef of Peppinos which had a decent run int he beach - i used to go quite a bit and his sauces (not surprising) over his meats were amazing!
anywho, I have to get there as the menu looks interesting and the space is also quite nice - man I hope it is good as the beach needs/deserves it!

He was cooking at Foodstock and was one of the first booths we visited. I ate a lot of things while there, be he stood out as I grew up in the beaches my family were rather surprised to find him there.
He served a small pastry shell (more like a popadom) filled with root vegetable, topped with salmon (which he was cooking in small batches, fairly rare) and topped with a thin cream sauce and sturgeon roe.
He seemed very flustered and overwhealmed, barking at his staff. It was complicated dish which may have been too difficult given the situation. That said, it will be an interesting addition to the beaches and I didn't realize that he was at peppinos back then.
