what cocktail to make with apple cider

I have lots of apple cider, but I can't figure out what spirit would be good with it. Ideas?

    I am assuming you mean the cloudy nonfermented stuff (not the clear bubbly ones).

    A classic dating back to Jerry Thomas served the way Green Street in Cambridge/Boston does it. Works perfectly with JMF's statement!
    Stone Fence
    2 oz Bourbon whiskey (they use Old Fitzgerald's 1849)
    2 oz Apple Cider
    2 dash Angostura Bitters
    Serve in highball with ice and lemon wedge garnish.

    A more modern Flip:
    1 1/2 oz Rye Whiskey
    1 oz Apple Cider (nonfermented)
    1/2 oz Benedictine
    1 dash Angostura
    1 Egg
    Shake once without ice and once with, and strain into a rocks glass. Garnish with 7 drops of Allspice Dram on the egg foam and an apple wedge.

      Yes, unpasteurized unfermented. I will have to try the Stone Fence, since I have no Benedictine lying about.

      Apologies for the thread necromancy, but I figured better to revive than reinvent the conversation.

      Bob McCoy (Island Creek Oyster Bar in Boston) has a great article in the most recent Edible Boston called Heartwarming Cold-Weather Cocktails. It includes a recipe for Hot Apple Cider; this is fabulous on its own, however I've had a lot of fun using the chilled cider in cocktails. He calls for steeping the cider with cinnamon sticks, allspice, cardamom, cloves and star anise. I did this, then let it cool for a few hours outside.

      This worked in the following:

      1 oz Applejack
      1.5 oz spiced cider
      Juice of 1 lemon

      1 oz Appleton Rum
      1.5 oz spiced cider
      1 oz. fresh lime juice
      grated nutmeg

      You don't HAVE to use liquor with "apple" name; that's just where we were at that point in the evening :)

        I'm glad you brought it back to life again....I've got a half gallon in my fridge that needs some help.

        brown spirits like brandy, whiskey, and rum work well with cider.

          I love a nice dark rum with fresh cider. Zing it up with some cinnamon and / or nutmeg.
