Fresh Tripe Retail?

dbwave Oct 21, 2011 01:38 PM

I would like to make tripe stew. I have never purchased tripe. Any suggestion on good quality places?

Most asian and mexican supermarkets have tripe, e.g. Ranch99, Lucky Seafood, Pancho Villa, Northgate etc. It really depends where you are living.

Perfect. All the same on freshness.....or is that relevant?

Northgate has 2 meat counters and turns their product pretty quickly.

It's the same as buying meat - look and smell to find out if there are any issues with it. Every supermarket can have good or bad quality meat. We bought chicken thighs recently at WholeFoods which looked good but smelled like they were stored in ammonia
