Holiday baking brioche

I'm thinking that for my home baked gifts this coming Christmas I'd like to make individual brioches with cheese and some kind of cured meat. I was thinking chorizo and tomme noir des pyrenees (if I can find it) but I'm open to other suggestions. What kind of cured meat and cheese bread would you like to receive as a gift?

Do you mean the bread has meat and cheese baked inside?
Or one or both on the side?

There are many recipes for Reuben bread, like a Reuben sandwich they contain corned beef, sauerkraut, Swiss cheese, Thousand Island Dressing -- certainly a popular combo of flavors if you could adapt them to a mini broiche.

I'm going to lose my standing as Pole, but I hate sauerkraut. Any other form of cabbage I have no problem with, but I can't stomach the choucroute.

On the meat front, my mind goes to capicola or soppressata.

Not strictly in your bounds, but cheese-and-olive breads might be a nice pairing with the sausage (or an option for veggies).

What type of cheese would you use with those meats?

I once had a pepperoni and asiago cheese bread that was fantastic. It was a nice sausage with a lot of flavor.
