What's for dinner...for one?
So, the What's for Dinner board is meant to be inspiring, but for those of us who live alone, it's not often full of ideas. I can't imagine that I'm the only one who lives alone but doesn't just go home a zap a lean cuisine. Maybe we can give this a try now and then?
Last night was curried turnip and carrot cakes along with braised red cabbage on the side. Tonight? Whole wheat tacos with chipotle-roasted butternut squash and black beans with lime crema.
Are you vegetarian, Katecm? I love baking or sauteeing very savory garbanzo beans with lots of garlic, olive oil, cumin, curry, some cayenne, and then, if I can stop myself from eating then all immediately, making different applications with pasta and greens, sauteed tofu cubes with Braggs and nutritional yeast flakes, with peas and corn and savory garlic stuffing in a small squash, etc etc. Small pizzas with really imaginative toppings are fun - mushrooms, zucchini, sauteed spinach, kalamata olives, sliced tomatoes, and the such.
