What's for dinner...for one?

So, the What's for Dinner board is meant to be inspiring, but for those of us who live alone, it's not often full of ideas. I can't imagine that I'm the only one who lives alone but doesn't just go home a zap a lean cuisine. Maybe we can give this a try now and then?

Last night was curried turnip and carrot cakes along with braised red cabbage on the side. Tonight? Whole wheat tacos with chipotle-roasted butternut squash and black beans with lime crema.

  1. Until about a year and a half ago, I cooked just for myself as well. Pretty much made the same things I do now, actually. I'd eat the same dinner for a few nights in a row or freeze the leftovers for later use. Both of your dinners there sound amazing!

    1. Are you vegetarian, Katecm? I love baking or sauteeing very savory garbanzo beans with lots of garlic, olive oil, cumin, curry, some cayenne, and then, if I can stop myself from eating then all immediately, making different applications with pasta and greens, sauteed tofu cubes with Braggs and nutritional yeast flakes, with peas and corn and savory garlic stuffing in a small squash, etc etc. Small pizzas with really imaginative toppings are fun - mushrooms, zucchini, sauteed spinach, kalamata olives, sliced tomatoes, and the such.

        I'm not vegetarian, but I tend to eat mostly that way. I just love veggies and legumes, and tend to prefer them to a big ol' chicken breast. If I'm cooking for others, I'll do meat. Your garbanzos sound wonderful! They could be a main meal OR a side dish for a meat.
