Bilson's Bites The Dust (Again)

Guess this is old news but I found out only recently and haven't seen any mention of it here.

I've always enjoyed Tony Bilson's food in various incarnations and his proteges have done well everywhere from Tets to Pascal Barbot.

I guess us folks who like to eat often forget that restaurants need to survive as a business too. Hope he doesn't stay out for too long this time.

  1. Very, very sad - I'd dined at Bon Gout in the 70s, Kinsella's in the 80s, Berowra Waters Inn in the 90s, and Bilson's @ the Radisson a few times in the past few years. Tony Bilson, to me, is a chef-restaurateur par excellence. I guess the Sydney restaurant scene is just too competitive.

      The restaurants were doing OK, apparently his corporate structure was poorly designed and so he was whacked with an unexpected payroll tax bill. I'm sure he will be back - just got three hats as well.
