Jacques Pepin shows you how on the NY Times website

He makes an omelet, sharpens knives, and peels and chops garlic. What a master, what a pro, what a charmer!

    And I noticed that the French Omlette has nothing except herbs in it. I always add cheese and a couple of veggies.

    I will have to give his simple omlette a try one of these days. I think he is a genius.

      I do like him too. I was watching him the other day (as opposed to The Chew that was on the same time) and realized, you don't need bells and whistles to show people how to cook!

        I cannot tell you how many times I've watched a video of Jacques Pepin making an omelet (wait, yes I can - probably about 8 times). Yet I still can't get mine to come out like his. It's either 1) really hard for me to throw that much butter in a pan, or 2) really hard for me to simultaneously shake with one hand and stir with the other. Oh, well. At least I'm reasonably proficient at chopping garlic.

          If you're using a teflon pan, you can use much, much less butter, which I did and it came out just pretty perfectly. I'm sure he does it for taste more than to prevent sticking since it is teflon.

            Tragically, I don't have a teflon pan that's a good size for omelets (they're all too big, so the eggs would spread out and cook through like lightning). My omelet pan is apparently made of Krazy Glue. Everything sticks to it. Hard. I like it anyway, because it's pretty, and I'm shallow.

            I was so inspired, I made the omelet for breakfast using his technique. It was delicious!

              How do you not scratch the hell out of your nonstick using a fork?

                I just watched the video and i made the face when he used a metal fork...yikes...didn't sound pretty either...all that scratching...will try his omelet method this weekend though.,...with a silicone spatula.

                  We buy inexpensive teflon frying pans (particularly the smaller size) and replace them frequently.

                    I'm guessing Chef Pepin goes thru a lot of non-sticks this way...so be it..yes, it bothered me to hear that metal fork against the pan--acckkk!...also, the teflon is probably being scraped INTO the eggs...but HE IS *swoon-worthy* no matter what...love him!

                      There are some teflon pans (actually, not really teflon, but non-stick) that are safe to use with metal instruments.
