Duck for 2 @ EMP? Off-Menu?
Apparently the duck must be aged for a certain minimum period. When I visited EMP in April, I emailed the restaurant to ask if the duck would be available, but they informed me it might not quite be ready by the date of my reservation.
The first time I dined at EMP, the captain mentioned the availability of the duck unprompted...
"As far as the duck goes, while it is usually available at dinner without an advance request, it can very occasionally not be available. So, if you knows you definintely want it, it's best to make that clear when booking so that the kitchen will be sure to have one ready for you."
This is not a regular v. non-regular thing. (Indeed, the only regular v. non-regular thing that I can discern at EMP is the number of petit fours offered)
Just ask. If they have some, you can have some. You might call ahead if your reservation is late, as they may simply run out.
