Savory winter squash tamales or empanades?

I grew a boat load of winter squash and have a notion that I should make something spicy with them. I like the idea of a tamale or empanada and have done a little research. There are plenty of sweet versions, some savory, nothing that looks outstanding. Anyone have something they would like to share? I prefer something without cheese, as the dairy and I do not get along.

    I made some tacos last week that you could easily turn into an empanada. It was roasted butternut squash cubes, which I had tossed in salt, pepper, and chipotle chili powder. On the stovetop, I cooked up black beans with onion and green chilis. Served with some lime and salt shredded red cabbage, lime crema and chipotle salsa.

        Apparently b-nut squash and black beans make a natural flavour match; I tried it a couple years back on fresh corn tortillas and was hooked. You can make a pretty nice bake out of it, too, and toasted walnuts or a crumbly feta top it well regardless. Or grilled corn! Looks like I need to revisit this soon; I do have a squash in the cupboard..

        I love butternut squash with sausage - I'll bet a roasted squash and chorizo filling would be divine. Maybe with caramelized onions/shallots/leeks/garlic and sage? I would probably add goat cheese but you wouldn't have to.
