Can I double ATK's braised short rib recipe?

Okay, so a few weeks ago I made the boneless short rib recipe from ATK and it was truly the best beef rib recipe ever. The only problem is that it didn't make enough.

Since I'm braising them in my dutch oven, can I just double the recipe and cook longer or won't that work because they'll be in 2 layers?

(I've doubled many recipes in the past but have just started cooking with my LC dutch oven, so am not that familiar with how to do it.)

  1. Just don't cook twice as long. It really won't take that much longer to do more of them. Check on them and when fork tender pull it.

    1. When searing, don't crowd the pan. Take the extra time to brown in as many batches as it takes to get a good crusty brown. Other than that, nothing different other than a little more time. Check at the finishing time of the original recipe and at 20-minute intervals thereafter, though I don't think it will need more than 40 minutes extra, if that.

      1. Both great suggestions, thanks. I think I was most concerned about cooking the ribs in 2 layers in the dutch oven versus just one layer when it's a single recipe.

          Not a problem in a dutch oven placed in the oven. Load it up it will cook fine.
