Need recipe...COLD artichoke Parmesan dip....help fellow chow hounds!!! :)

I have had artichoke Parmesan dip from local caterer. When I try to find a similar recipe...they are all dips that are baked in oven....this is not what I want. Can anyone help me???

    2 cans of "packed in water" artichoke hearts
    1 3/4 cups of freshly grated Parmesan cheese
    2 small cloves garlic, chopped
    3 Tbsp finely chopped onion
    1 cup of mayonnaise
    Salt and pepper to taste

    Drain artichoke hearts. Put all ingredients in food processor and pulse until well combined but avoid making mush.

        You're welcome. Don't be afraid of recipes that "bake" the artichoke dip. Heating the ingredients when mixed helps to blend the flavors (e.g. the cheese melts into the rest of the ingredients) and once it's been heated it can be cooled and served much like any other dip.

      I buy the marinated artichoke hearts from the olive bar, pulse them in the food processor - like todao says, don't let them turn to mush - then stir in grated parmesan. Wayyy too easy, but it's so good. You could add garlic, spices, etc. to taste if you want.

        My girlfriend used to buy cold artichoke dip at a little store in Jersey and I would devour that stuff in like 3 seconds... It's seasonal and even when it's in season it's hit and miss to buy it because it sells so fast. I hope I get to try this recipe.. Maybe she'll make it for me !! :)
