Help! I need your best turkey leftover recipes!
I bought a turkey a wee bit too big for Canadian Thanksgiving and now I have lots leftover. (highly recommend the free range, organic turkeys, very yummy) What can I do with all of this yummy leftover turkey?

The possibilities are virtually endless. White meat -- aside from the obvious sandwiches (yum) -- goes into Turkey Noodle soup, Tetrazzini, a la king, Pot Pie and dilled Turkey Salad as well as Caesar, Cobb and Chef's Salad. Dark Meat is shredded or chopped or diced and goes into pulled BBQ turkey sandwiches, Tacos (ground or shredded), Stroganoff, Chili, Lasagna, Gumbo or Jambalaya. Legs are smoked. Wings are disjointed and smoked and/or deep fried. Bones go into stock. Legs and wings go into Cacciatore as is, or as Osso Buco with pasta or polenta or risotto.
You could make a Noodle Casserole or a Shepherd's Pie or Sloppy Joe's. You can make a Bolognese with it or slice some up into an Alfredo. Use it for Enchilada or Burrito filling, or make cutlets and do them Cordon Bleu style (even with pre-cooked Turkey). Add some to a stir-fry at the last moment. Make a White Cheese sauce and toss in some cooked broccoli and some cooked Turkey and serve over rice.
I just can't wait for our Thanksgiving.
