Leftover breadcrumbs mixed with oil

Last Sunday I stuffed artichokes with a mixture of breadcrumbs, olive oil, fresh garlic, and romano cheese. I had quite a bit of stuffing leftover, so I put it in the fridge in a tupperware. Can I still use it this week, do you think? I wasn't sure because of the olive oil how long it would keep.

  1. I think it's fine to use this week. You could use it for meatloaf, meatballs etc. as a binder/filler. You could also use it to top a tuna casserole or mac and cheese. Also, a gratin of anything seasonal, like squash or kale, broccoli too.
    Lots of possibilities.

      Great - thanks! I want to stuff zucchini with the mixture and a little mozzerella but was a little worried about whether it would have kept.
