Grilled veal chop dinner....what to serve with it?

any suggestions as to side dishes

    I would ask what you're doing with the veal chops and what if any kind of spices or herbs you're using.

    some ideas are to use cumin and a little smoked paprika and serve with mashed sweet potatoes and frizzled leeks

    Italian seasoning of maybe some garlic and rosemary served with polenta and broccoli rappini (rabe)

    Roasted green beans and garlic smashed red potatoes would be a nice accompaniment to very lightly seasoned grilled/roasted veal chops

      My favorite is a bed of beans (butter, flageolet, or cranberry) simmered with sage and bay and olive oil, with some nice sauteed rapini on the side.
      Now I want a veal chop!

        I made braised veal chops for my wife's birthday last week, and served them with a super-rich sauce made with a mix of wild mushrooms (that she had foraged herself), shallots, a little chicken broth, butter, and lots of veal/beef demi-glace. Fantastic combination. Some fresh farmer's market haricot verts steamed just al dente provided a bit of balance.

        I made plenty of the mushroom sauce so that we had extra, and the next night mixed it into mashed potatoes to accompany a roast chicken. Heaven!

            Snow peas stir fried in butter and oyster sauce and some saffron rice?

            Roasted brussell sprouts and some horseradish mashed potatoes?

              I love Brussels sprouts and horseradish, but I think those flavors might overwhelm the delicate veal.

              I just made some on Sunday. Served w/ steamed, smashed honeygold(mini yukon gold) potatoes w/ butter and parsley and steamed sugar snap peas. Made a sort of hash w/ the leftover potatoes and veal the next night.

                that sounds really good, too.....potatoes are always good.....I had thought of roasted fingerlings, but that I needed something a little 'softer'....

                Mushroom risotto. Baby greens with fruit, nuts, and dijon vinaigrette.

                  I was just sure some kind soul would suggest risotto......I cook a lot, but risotto is so ;last minute iffy'....do you have an iron clad, foolproof way of making it 'perfect'?
                  thanks very much!...I was also thinking of polenta, but again, I'm not so sure of the 'right' way to cook it!...I do think I'll use the parsley, garlic, lemon zest gremolata, and I found a good marinade recipe that I could probably use as a sauce....thanks, again!

                    DISCLAIMER: i KNOW THAT THE RECIPE I AM POSTING A LINK TO HERE IS NOT "REAL" RISOTTO. But it's pretty darn good and is a great quick alternative.

                      sandylc----you are a genius!...thank you so much.....I use that website, but had not seen (or looked for) microwave risotto...the fact that you have tried it is very convincing!
