Pork Tournedos

I have a recipe for pork tournedos. Can I use a pork loin sliced thickly as a successful substitute?

    Nah, use tenderloin. What I love about making pork tenderloin is slicing it for a gorgeous presentation.

      I would definitely use tenderloin -- loin would yield way too large slabs of meat, and there would be connective tissue that would mess things up.
