Looking for a place to take serious cooking classes

Hi fellow chow hounders,

I'm looking for a place to take cooking classes in Chicago---I live in Lakeview but don't mind traveling anywhere in the city as long as I am getting a quality hands-on learning experience. I admit that the only place I have taken classes in Chicago has been at The Chopping Block in the Merchandise Mart. I would consider myself a fairly decent cook in need of polishing up on technique and knife skills As for cuisine, I am open to any and all although I am most interested in French and New American.

    If you're interested chocolate, Barry Callebaut has some good instruction. You can take a class or two instead of enrolling in an entire curriculum. http://www.barry-callebaut.com/35

      If you're serious enough to be interested in a degree program, there's also the Cooking and Hospitality Institute of Chicago, which is affiliated with Le Cordon Bleu College of Culinary Arts: www.chefs.edu/Chicago
