Didn't see another thread on it yet, but it's official: three Michelin stars for Eleven Madison Park.

A big congrats to everyone on the team there. Very, very well-deserved!

I love Ryan Sutton's work and am delighted he's been helping us learn more about the finances of New York dining. I wish Sutton and Guidara had been able to discuss the financial implications of the EMP sale, which I suspect will be more decisive for future pricing than the restaurant's promotion to three Michelin stars.

So Meyer's Shake Shack business wasn't subsidising EMP, though its profits may have helped Meyer tolerate very thin margins at EMP.

I am not basing this on any info but I never, like some have posed, thought EMP was operating at a loss and being proped up by other businesses. I do think, again, not basing on any info other than gut, like you said, they probably operate with a thin profit line.

Profit is relative. Noma is also profitable -- it's annual profit is apparently $10,000.

Ah, so Noma is profitable (if barely)... Is it true El Bulli never made a profit?

When Will speaks of 'we' making this or that decision, especially in terms of how to make EMP luxurious yet accessible, I wonder how much of 'we' was Danny Meyer as opposed to Humm and Guidara.
