Authentic Dan Dan Mian?

Anyone have any recommendations for where I can find really authentic Dan Dan noodles in Austin? Or even point me toward a great recipe so I can make it myself?

  1. Two sources: Fuschia Dunlop's Land Of Plenty has two excellent recipes. They are rather different from each other, but both good. Then Robert Delfs in "The Good Food of Szechuan" has a wonderful recipe that I make all the time.

    I have yet to find decent dan-dan here in Austin.

      I just looked at the recipes in FD's book and these are nothing like the poor examples I've gotten in restaurants - usually just a bunch of noodles with a couple tablespoons of peanut butter with soy sauce and green onions. Really disappointing, so much so that i never actually looked a recipe for them.

        Try the one in Delf's wonderful cookbook. You'll never again be able to eat in a Chinese restaurant here in Austin.

    2. Asia Cafe is usually considered the most authentic Schezuan in Austin and they do have Dan Dan noodles on their online menu. I haven't tried them - so no guarantees. If you go, please report back and let us know how they were.

        I've tried them. Fair-to-middling, and not a patch on what you can fairly easily make on your own.
