Three Dinners in Florence

I have four nights in Florence in early November and I take my dining seriously. I have plenty of recommendations for casual options for lunch but am looking for dinner options. I would like a mix of traditional Tuscan and modern cooking. Ora D'Aria interests me but I am afraid that my non meat-eating husband will have nothing to eat (I looked at the online menu and it really is limited). I am planning one dinner at Quattro Leoni. So I still need three recommendations for Florence's best. I'll take suggestions and if you want to point me to previous threads that's ok too.
