Fixed price dining after 7pm in October

Now the Taste of Wynn specials (I am in town for work and was planning to take my clients to Bartolotta but missed out by 4 days) have ended I am hoping to get suggestions for higher-end restaurants that offer good value set-menus that don't require you to be seated before 7pm. Will be dining this Tuesday.
