Um, well, coring them usually means removing the stem, so you might just want to leave them with core. I don't know how you could otherwise, maybe remove the core from the bottom, but you'll have to leave some of the fibrous strip up through the neck, plus it might be a challenge to remove a partial core. It's doable, but I'd just leave them whole. You can leave the stem on, if you can figure out how to work that out. Did you have an idea on how to do this?
