1st Birthday Party - Cake Help
I am baking a cake for my daughter's first birthday party. She will have a frosted muffin or small cupcake, but the other 40 people we're hosting will want real cake. My family has a tradition of making a tweed cake for birthdays with a recipe similar to this (link below). It's a very dense cake, and I usually do 3 8-inch layers. Do you think I can make 3 batches and bake each batch in a 9x13 pan? Alternatively, any suggestions for a cake to feed 40+ people? I'm thinking basic chocolate and / or vanilla (no citrus please). I am looking for a recipe and pan sizes please. Thank you.
A 9x13 cake generally converts to around 2 8 inch ones....not 3, so you might find yourself with more batter than pans. Keep in mind that any leftovers can be frozen (or turned into cake balls later) if need be, though.
And definitely go with both chocolate and white/yellow cake options. Offer up both options because most people prefer one over the other. Stick with those 2 basics, though.....you don't need anything fancy when the real highlight should be about your daughter. :)
