Where to go in Vancouver if you only have one meal (lunch)?

I have a 7 hr layover where I'll be renting a car for that time. Where should I go? I don't have any $ constraints but clearly somewhere 1 hr out won't be too good. I am thinking of quickly visiting granville island or stanley park. I am willing to eat anything that I shouldn't miss (I do miss Taiwanese Xiao Chi though)...

Renting a car will actually slow you down considerably-it's a quick 25 minute train ride into downtown-where parking rates are notoriously high.

#3 Road in Richmond has tonnes of Taiwanese options and is close to the airport-if you're heading down to Granville Island then maybe Edible Canada would work.

Where are you from? This is kind of a strange recommendation but if you can't get good tacos at home consider La Taqueria. There is a location right on the SkyTrain line at Cambie & Broadway.

If you chance on a nice day, maybe you could go to Go Fish, which is at Fisherman's Wharf just west of Granville Island.

Totally agree with Sam on transiting on Canada Line to downtown. Costs $8 and only takes 25 min. You can cab from any Canada Line station. Richmond boasts the most selection of Chinese foods; so if you are craving Asian, check there. I personally like Cardero's which is near Stanley Park; great views and good food. Otherwise, try Market by Jean-George which is downtown. No shortage of good options in Vancouver. You can even stop by one of the many street food carts scattered around downtown. Should definitely come back to visit longer, even if only for the food! :-)
