Where to buy Fat FREE ricotta cheese
You can't - it's a labelling restriction up here, the standards are different for fat-free vs low-fat commercial dairy. You have two "real" options (if making your own from skim milk and one heck of a thickening agent is out of the question). One, go down to the US and buy some en masse - it usually freezes okay in my experience. The second is to buy skim-milk COTTAGE cheese and pulse it in a food processor a few times to get the texture you want. If you want "dry" ricotta, Western Creamery makes a "pressed cottage cheese" in fat free you can use.
