Two (2) Rib Eye Steaks

Rocky Road Sep 22, 2011 02:19 PM

I got two rib eye steaks on sale the other day. I'm cooking for two people.

For the first steak, I did a Japanese Beef Teriyaki dish with sauteed Gai Lan served on rice. I sliced the rib eye thinly, made my own teriyaki sauce and sauteed the Gai Lan with onions and garlic. It was a simple meal but very good.

I'm looking for inspiration for the second steak. Needs to feed two and most likely will have rice as a side. Any suggestions?

I'd do a Mexican theme. Rub with chili powder/ancho/whatever chili powder, cumin, paprika, oregano, smoked paprika, garlic and brown sugar. Slice very thin and prep in much the same way you did the above, with onions and peppers.
You can add a can of beans, some cheese on top and maybe sour cream or creme and salsa/other sauce like salsa verde or enchilada.

I used up a single ribeye the other day by making stew with onions, bell pepper, garlic, tomatoes, and some Goya sazon.

Some Spanish rice and a lemon garlic roasted zucchini salad on the side.

Here's a link to sequential pics if it gives you a better idea:

Grill it to medium rare doneness!

              Throw some chimichurri on it.
