Need a hen fowl to make chicken soup--please help!
We moved to SF from NY last year right before the Jewish holidays and I never did find one of these: I need a fresh old chicken (actually a few of them), aka hen fowl, to make chicken soup. The closest I got last time were slightly older chickens from Bi-Rite, but I noticed a flavor difference. Any thoughts? Are there places in Chinatown that carry them? Thanks.
My Dad used to bring home "stewing hens" aka "stewing fowl" when from his second job cutting meat north of Boston at First National Stores aka FINAST . They are "retired" laying hens (some golden parachute eh?) Marin Sun Farms probably has some in their freezer. You could call. They are very tough, but also tasty. Sometimes also they have a genuine "Coq" for "coq au vin".
