Marrons glaces

I was told that it's better to buy marrons glaces that are vacuum-packed. Does anybody know why?

    It was Clement Faugier who invented the system of vacuum-packing as he knew marrons glaces were extremely fragile. They explain it in the history tab here: http://www.histoiresucree.com/product...

      The best I've ever eaten are the ones from La Maison du Chocolate. They only have them seasonally around Christmas, they are made fresh and are not vacuum packed. There is no danger whatsoever of them drying out...in our house they disappear very quickly. Be forewarned however...they are shockingly expensive!

        Because they dry out over time. It takes a good long while, though, so grab whatever ones you can find.
