Bellingham: Dashi Noodle Bar

Who's excited about the opening of Dashi Noodle Bar? I am! Have high hopes for this to be something good and different.

    I've had the house made ramen with pork and ramen dashi several times but I actually prefer the beef steam bun with hoisin - thought it was the best thing, especially since it was a late lunch and they delivered to the office - that was fabulous.

      My husband just started working around the corner from Dashi Noodle Bar so we tried it last week. He usually brings leftovers to the office so the delicious hot, homemade, fresh noodles and broth were a real treat. We had one dish with the mushroom broth, whole wheat ramen (made there) and tofu. With the pickled vegetables (esp the daikon and jalapenos), cilantro and lime this was a great lunch. The other dish (you select your combinations) had the meat broth, chicken and regular ramen. Also very good, nourishing, and filling. In our opinion, the quality of the food, unusual ingredients and unique walk-up, neighborhood vibe make Dashi an acceptable value for a terrific lunch...but not an everyday habit.

        Tried it and liked it. I dashed in there on the first week and got the cold noodles, steamed bun with chicken and iced tea. The noodles were very tasty with lots of fresh veggies. The bun was more of a sandwich but also very tasty. The bun and noodles filled me up but individually they were not a full lunch. As far as price, with tax & tip it came to a little over $20. That is a lot for lunch if you were to dine out every day. I usually make my lunches so I will treat myself to Dashi again.

          I am following you around the board :)

          We tried Dashi a week ago. I had the pork soup base with grilled chicken and round noodles. My take: the food is certainly yummy, but the prices are too steep for the quantity. We got "to go," so I can tell you that there was about 2/3 cup of broth, about the same of noodles, and maybe 4 strips of grilled chicken. $8. Had I opted for ramen noodles, it would have been $10. Also, I would have liked the condiment "bar" but in actuality, it is a very small tray w/8 compartments of herbs, limes, kimchee, etc. When they are busy (as they were), they don't keep it stocked, and most of what I wanted (pickled veg) were emptyish. Also, I missed scallions in the condiment tray. When I asked, they told me they garnish all the soups with them, but if mine had a stray ring or two I didn't notice.

          I am going to go back and try those buns though - they look great. In fact, I'll probably go back for the soup too, but I'll eat at home first :)

            Agreed, about price. My hubby wanted the family to go check it out, but when I mentioned that we'd be paying upwards of $25 for lunch he changed his mind. The condiments were well-stocked when I was there and I helped myself to lots, so maybe it is people like me that cause it to get emptyish! But, frankly, since I paid $8 for a noodle bowl I felt entitled to stock up on all the sides. I would have tried house-made noodles but $10 for the quantity of food that is served was just more than I was willing to pay. I think they'll have to get a better price point for the downtown lunch crowd, because once the novelty wears off people won't spend that much on lunch.

            Were you a Nimbus fan? I never was; too spendy for the quality of the food. The only thing we were happy with was the happy hour apps. Last time we went our entrees were very overpriced and weren't even good. After having to close Nimbus, I'd think they would be a little more price conscious.

            Now, I'm off to read your comment about Stone Pot, 'cause I'm following you around the board, too! Did you join the new supper club that L.Nightshade from the PNW board started?

              I went to the 2nd dinner - it was a nice crowd. Re Nimbus, we liked it. Coming from a bigger city (LA) it was hard to find places that did upscale well for the occasional date night. Nimbus seemed to do it well, and between the coctails and view, we would have been happy almost regardless. We've had a couple not great dishes there, but typically we would walk away happy. Poor, but happy. We tried Prospect Street once. It was nice but also spendy w/o Nimbus' gorgeous view. Never made it to Tivoli. Flats was also pretty decent.

            I finally ate at Dashi, Got a vegetarian noodle bowl ($8) with Chinese round noodles, mushroom dashi, and tofu. Then I piled on the delicious condiments! Two kinds of kimchi, and loads of other pickled and otherwise delicious stuff. The condiment bar was by far the best part. The meat that was cooking smelled quite yummy, but I'm not a meat-eater so I can't offer any review on that. I would recommend that folks head on over and check it out! Fun to have a sidewalk take-out like this in our fair city.

            Now, waiting on Stone Pot to reopen in their new downtown location!

              Thanks for posting this laura, I've been craving a good noodle lately! I don't do lunch out much, I hope the beta version is successful and they end up with a real location and expanded hours.
