This guy did a freat job on my Hattori knives. http://www3.telus.net/public/kitano/ He picked them up and delivered them a couple of days later. I've never had knives so sharp and they have remained sharp for months now.

Thanks so much for the Sharpening House rec - just got back. The knives are like new and the garden pruners too. Same day service. 5 knives = $25. He even fixed a couple of rather bent and broken ones. Yay!

FWIW the SO ended up learning how to do it and getting all the gear. Re serrated edges, if you only use your bread saw to cut bread it stays way sharper. Found that out the hard way :-).
I haven't lost any significant "steel" on the tip or heel of the Shun knives I bought that have only been sharpened at home. My old knives were gradually being ground away using Knifex, as convenient, reasonable and so on as it was.

For the absolute BEST knife sharpening go see Sean at the "Sharpening House" at 5331 West Boulevard in Vancouver. He takes great pride in sharpening all manner of knives, scissors, etc. He's quick and also very reasonable - (he offers a special of 5 knives for $25!). I've been taking my knives to him for years and am always really happy.
